Simple Lemon Garlic Chicken

I had the pleasure of visiting a friend’s cottage this weekend with 20 others (it was a rather large cottage).  While soaking up my first dose of sun for this year, I was also introduced to 2 superb summer recipes: Lemon Garlic Chicken and Black Bean Avocado Salad.   Both dishes provided a refreshing flavour – the perfect balance to this heat wave in Toronto. 

During dinner, I noticed everyone endlessly complimenting the cooks and going back for seconds and thirds.  That was my cue.  I had to steal these recipes and have been harrassing the poor host with emails and text messages since the weekend (sorry Christine!).   As you can see, I was successful. 

I’ll kick it off with the chicken…salad to follow.

Marinated Lemon Garlic Chicken

The other great thing about this recipe is that it requires less than 5 ingredients for the marinade (pepper doesn’t count).  AND it’s healthy.  You wouldn’t expect anything less from me, right?

Garlic Lemon Chicken


  • 2 boneless skinless chicken breasts
  • 2 cloves garlic, minced
  • 4 tablespoons olive oil (or coconut oil)
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons lemon juice, fresh preferred
  • 1/8 teaspoon pepper


  1. Place chicken breasts in a large ziploc bag or bowl.
  2. Mix first five ingredients together and pour over chicken.
  3. Marinate at least one hour, longer if possible.
  4. Grill or saute on med-high heat.  Key is to wait until the pan is hot enough and let the chicken sizzle. This will keep the juices contained and maintain the moistness.

    I made both the chicken and bruschetta this weekend and they were delicious! Both very fresh tasting! Was able to pick the parley and basil fresh from the herb garden so that was yummy. Also added a bit of fresh ground parm to the Bruschetta which added some nice flavour.

    Wow the chicken looks so perfect. The recipe sounds so delicious. It’s definitely going to be a hit in my family.

    I’m looking forward to the avocado bean salad recipe. I took a course on how to season like a chef and here is a really good bruchetta recipe. Its delicious.

    Avocado Bruschetta
    Evenly dice 2 ripe roma tomatoes and 1 avocado. Finely dice ½ red onion. Julienne 8 basil leaves and parsley or cilantro. Zest and juice 1 lemon and some lime and then add it to the tomato mixture along with some extra virgin olive oil. Add fresh black pepper and Himalayan Pink Sea Salt to taste. Mix and serve with crostini’s and crackers.
